Intense ruby red in colour. The nose is rich yet refined, with notes of ripe cherry, wild berries and a hint of dark chocolate. On the palate it is full-bodied and well-structured, with a warm, enveloping and harmonious finish.
A natural match for grilled red meat, roasts and aged cheeses.
Best served at 16/18 °C.
Porton del Drago is a lightly dried Rosso Verona IGT — a wine that sits between the everyday freshness of Valpolicella and the intensity of Amarone, with a character entirely its own.
The grapes are hand-picked in September and October and placed in plastic crates, where they dry slowly for approximately 40 days in a temperature and humidity-controlled fruit loft. This gentle partial drying concentrates the aromas and deepens the colour without losing the wine’s natural balance.
Destemming and pressing take place in December. Fermentation follows in stainless steel tanks at around 25°C, with a slow skin maceration lasting approximately 25 days and daily pump-overs to build structure and extract colour.
The wine is then aged in French oak tonneaux and barriques for 12 months, developing depth and complexity. It rests in bottle for a further 6 months before release.
