Recioto della Valpolicella is one of the oldest and most treasured wines of this land — the historical predecessor of Amarone, and a wine unlike any other.
The grapes are hand-harvested at the end of September and beginning of October. They are then laid in wooden trays and transferred to dedicated drying lofts, where ventilation, humidity and temperature are carefully controlled. There they rest until January, slowly concentrating their sugars, aromas and character over approximately 100 days.
Destemming and crushing take place in February and March. Fermentation begins alongside a skin maceration lasting 30 days at a controlled temperature of 20°C, with daily pump-overs to extract colour and depth. At a precise moment, fermentation is intentionally stopped — preserving a natural residual sweetness that gives Recioto its signature full, velvety character.
The wine is then transferred to large Slovenian oak barrels, where it matures for 24 months. It rests in bottle for a further 6 months before release.
