Pale straw-yellow in colour with delicate greenish reflections, Capuleti is defined by its fine and persistent perlage. Fresh and harmonious on the nose, with gentle fruity and floral notes. On the palate it is soft and refined, with a clean mineral finish.
Perfect as an aperitif and an excellent match for fish starters, seafood risotto, white meats and light dishes in general.
Best served at 6–8 °C.
After harvest, the grapes undergo gentle pressing. The resulting must is fermented in stainless steel tanks at a controlled temperature, preserving the grape’s natural aromas in their purest form.
The base wine, enriched with selected yeasts and sugars, undergoes a second fermentation in pressurised tanks using the Charmat–Martinotti method, at a carefully controlled temperature. The process concludes with stabilisation, filtration and bottling.
