Ruby red in colour. The nose is intense yet delicate, with inviting notes of red fruit and cherry. On the palate it is well-structured, harmonious and satisfying — a wine with real depth and a generous finish.
An excellent match for pasta dishes, grilled red meat and roasts.

Winehunter: Bollino rosso
The grapes for Le Cariole are harvested by hand in September and October. Alcoholic fermentation takes place alongside a short skin maceration of 8 days at a controlled temperature of 25°C, building the wine’s initial structure and fruit character.After fermentation, the wine is refined over winter in stainless steel tanks. It is then “repassed” — refermented on the still-active Amarone pomace, a defining step that gives the Ripasso its deeper colour, greater body and a touch more alcohol.
This is the heart of the method: the fresh Valpolicella wine absorbs the richness left behind by the Amarone, emerging transformed.Le Cariole is then transferred to French oak tonneaux and barriques, where it ages for 24 months. Before release, it rests in bottle for a further 6 months.
